Lemon Ginger Dressing
- 4 tablespoon olive oil
- 2 tablespoon fresh lemon juice
- 1 tablespoon freshly grated ginger
- 2 cloves garlic, crushed
- 1 tablespoon apple cider vinegar
- 1 teaspoon maple syrup
- 1 teaspoon turmeric
- ¼ teaspoon salt
- pepper, to taste
Detox Salad
- 4 large leaves curly kale, de-stemmed
- 1 teaspoon olive oil
- pinch of salt
- 2 cups red cabbage, thinly chopped
- 1 medium carrot, peeled into thin strips
- 2 green onions, chopped
- 1 rounded cup broccolini, chopped
- 2 radishes, thinly sliced
- 1 small avocado, cubed
- ¼ cup roasted sunflower seeds
- 2 tablespoon fresh mint, minced
- 2 tablespoon fresh cilantro, minced
Serving and Storing - Serve salad immediately. This is a big salad. On its own, it is enough for 2 servings. It will serve 4 if you're serving it as part of a larger meal. Store leftover salad in the refrigerator for up to 1 day. Store salad dressing separating for up to 2 weeks.
