In reply to George Sullivan. Each recipe will have specific guidelines but I recommend rinsing it off in a colander and patting it dry with a paper towel before using.

What is the steps to salt the eggplant? How do you remove the excess salt? Do I salt in a bag? I know I don't want a lot of excess salt in the end.

Never before going vegan would I have drooled at the thought of putting eggplant on my pizza. I didn't even like eggplant. I was a pretty boring eater, to be honest. Now I love eggplant. My taste buds have come a long way!
