This is a great zucchini bread recipe—adaptable as far as add-ins are concerned and deliciously seasoned. My husband used to buy a local loaf made with eggs (which I didn’t want to eat), but now prefers this one. I usually make my own applesauce for baking and will try this next time without the oil, adding more applesauce instead. Thank you for your inspiring recipes!

I baked 3 different zucchini breads today trying to find the best...WELL THIS IS THE BEST! i followed the instructions exactly and added the walnuts. Oh my goodness delicious!!

I absolutely LOVE this recipe and so does everyone who tries my zucchini loaf. I just have one question......how on earth do you prep this in 15 minutes????? I must be slow as a turtle cuz it takes me just shy of an hour in prep time 🤨

This was one of the best, easy, most delicious recipe I’ve had the pleasure of making. I didn’t have much trouble with the water from the zucchini (I must have gotten a dry one lol) My bestfriend and I ate almost the whole loaf! Need to buy more loaf pans so we can make one EACH! I wish I could give this MORE THAN 5 STARS because it deserves it!

I love this recipe! Made this for my family and it was gone in less than 24 hours!! I'm quickly making another at the moment. I replaced both sugars for 1/2 to 3/4 cup coconut sugar (depents on how sweet I want it) and instead of walnuts I used a nut mixture, pumpkin seeds, cacao nibs and raisins. I would love to try this recipe oil free as well!

This is the most delicious zucchini bread I have ever had -- vegan or not! I did reduce the sugar by a little bit, and found i didn't need to bake quite as long if using a metal pan. The spices are so unique and just perfect! I made a triple batch to bring to a potluck, and it was a huge hit! So happy that our son who has dairy & egg allergies can enjoy this yummy treat, too. Thanks for sharing!
