I usually use tofutti brand too. As far as butter, I always use either Earth Balance Buttery Sticks or Mioyoko's Cultured Butter. The quality of butter would have a big impact on the texture of the cake.

I've been meat & dairy free for 2.5 years now and in addition to what you list, I also always have cannelini beans (great for hummus), barley (great for grain bowls or soup/stew), and teff flour (baking & pancakes). I also only use jasmine or basmati rice since they are reportedly lower in arsenic and easy to find organic nowadays.
