Looks delicious! Would it be possible to make this in mini bundt pans? If so, how should the bake time be adjusted?

I'm not vegan (but have gluten insensitivity) but I love trying vegan recipes and it is sometimes useful when my mom who is a stage 4 kidney patient asks for some snacks or dessert as she can't consume eggs and dairy due to their potassium and phosphorus content.
I followed this recipe except for the applesauce and soymilk due to unavailability at the time at home, I subbed oat milk for soy milk and tofu (1/2 cup pureed for 1/2 cup of applesauce -- I believe that's to replace 2 eggs?).
The cake came out perfect and baked according to the recommended time, and since I can't taste it due to not using GF flour, someone at home ate it and said the spices are just perfect without any overpowering taste. In case anyone's wondering, no, nobody could detect there's a half cup of silken tofu in the cake!

I followed this recipe exactly and it came out great! So delicious and an easy and a huge hit with my family. I also floured my Bundt pan after I greased it which I think helped. I baked it the full 45 min. I will definitely be saving this recipe and making again

I followed the directions exactly and this turned out to be the best Christmas cake ever. Served it to a mixed (vegan/no vegan) crowd and it received raves. Moist, full of gingerbread flavor. We glazed it with lemon icing which offset the spices nicely. I might spray and flour my bundt pan next time, as the cake stuck a bit. Thanks for a perfect recipe!

I didn't have molasses, but found date syrup in my cupboard. Replaced it with that and came out gorgeous!! Put a chocolate glaze on top... it is to die for ?

I made this today and I used Doves gluten free self raising flour and it turned out perfectly well! Very moist but light and deliciously tasty! Thank you so much , I found the recipe on Pinterest and have put a photo in my board !

I made a half batch of this recipe with a gluten-free flour blend to celebrate the first day of fall. Everyone loved it, and requested for it to be added to our Thanksgiving menu. Definitely a new favourite!
