This is an excellent vegan lasagna; however, I cannot get it to fit properly into a 9 x 13 pan. Instead, I use an 8 x 8 square pan and it serves plenty for my husband and I to have 2 meals. DELICIOUS!

You will need to use vegan butter for the bechamel sauce. Oil just won't work.

Yes, frozen lasagna can be stored in the freezer for up to 3 months. When you are ready to eat it, let it thaw completely in the refrigerator overnight before baking.
